One is this Punjabi recipe and the other is my mom's version of Methi aloo with garlic and. This Aloo Methi was quite a winter staple in my home and is best enjoyed with flatbread like roti. I don't see fresh methi leaves (fenugreek) very often here in the market. You can cook Methi Aloo simply I make.. no onion no tomatoes using 10 ingredients and 9 steps. Here is how you achieve it.

- It's 1 bowl or bunch of fenugreek leaves/methi.
- You need 4 of potatoes.
- It's 6 of garlic.
- You need 2 of dry red chilli.
- It's 2 spoon of Oil.
- You need 1/2 tsp of mustard seeds.
- Prepare 1/2 tsp of cumin seeds.
- You need 1/2 tsp of turmeric powder.
- It's 1/2 tsp of red chilli powder.
- Prepare to taste of salt.
But whenever I spot them, I make sure to buy few bunches and either make paratha with them or a simple stir fry like this Aloo Methi. Made this simple aloo methi without onion and garlic when I had run out of both in the kitchen. Add chopped methi leaves, finely chopped tomato, amchur powder and mix well. Add salt & sugar at this stage, mix again.

- First clean the fenugreek leaves/methi & chopped finely & turn in a big bowl with water..
- Wash 2 or 3 times with water then keep aside for drain the water..
- Meanwhile chopped potatoes & garlic..
- Heat the heavy bottom pan add oil in it when oil is heated add cumin seeds & mustard seeds in it..
- Then add chopped garlic & 2 dry red chilli saute for a minute..
- Add chopped potatoes in it & dry spices like turmeric powder and red chilli powder mix well & cover the lid for low flame..
- When potatoes is half cooked then add chopped washed methi/fenugreek leaves in it mix well add salt & cover the lid again..
- Cooked 10 to 15 minutes in low flame in between check again & again it's cooked or not..
- After 15 to 20 minutes.Methi Aloo is ready to serve with chapati or puri or paratha or rice too..
Aloo Matar is pretty easy to rustle up whether you use onion garlic or not. Tomato - use crushed tomatoes or passata.
